Pumpkin Whoopie Pies

St. Croix Quilters' Guild Refreshments―October '11
Cookies:
3 cups pumpkin
1 cup vegetable oil
2 cups sugar
2 eggs
Beat above ingredients together.
4 cups flour
3 tsp. baking soda
3 tsp. cream of tartar
2 tsp. cinnamon
¼ cup milk OR water
Add to wet ingredients and mix well. Drop by spoonfuls onto cookie sheet. Bake at 350° for 11 minutes.
Filling:
1 8 oz. pkg. cream cheese softened
¼ cup margarine
2 to 3 cups confectioners sugarMix filling ingredients together, then sandwich filling between two cookies.
