Vicki's Sweet Potato Casserole

St. Croix Quilters' 2019 Christmas Party

This dish was a big hit at our annual Christmas party.

40 oz. can sweet potatoes
1 cup sugar (I use ½ cup)
2 eggs
Dash of cinnamon (I use ¼ tsp.)
½ can (12 oz.) evaporated milk

Mix above ingredients together then add:

¼ cup butter

Bake at 350° until it starts to thicken, about 30 minutes.

Mix topping ingredients together:

1 cup pecans
¼ cup butter
¾ cup brown sugar (I use ⅓ cup)

Add topping to sweet potato mixture and bake an additional 15 minutes.
