Corn Bake

St. Croix Quilters' Christmas Party 2016
 

Saute together and set aside:

1 small onion (chopped)
½ cup margarine

Mix together:

1 (1 pound) can whole kernel corn (undrained)
1 (1 pound) can cream style corn
1 box Jiffy corn muffin mix
3 eggs

Stir above ingredients with onion/margarine mixture and mix well.

Then add:

2-3 cups cubed ham

Pour into large 9" x 13" casserole or baking dish.  Add topping below.

Topping:

1 cup sour cream
1 cup grated cheddar cheese

Bake at 350° for about an hour.  It should look moist and soft yet be a little brown looking when done.
